Sabrage is an art form in this region, and Isabelle, your local private guide, will introduce you to this famous tradition!
She’ll guide you through the process, teaching you how to sabre bottles of champagne from winemakers in the village of Aÿ!
You’ll be welcomed by Isabelle, who’ll tell you about the region, the famous Grand Cru village of Aÿ-Champagne, the Champagne appellation, and the history of sabrage.
After the sabrage, you’ll be able to fully enjoy your sabred bottle on the premises, in a private landscaped garden in the heart of Aÿ, in a friendly, rustic atmosphere, where you’ll discover the art of serving Champagne and receive tasting tips.
You can choose your glass from a wide collection of vintage and modern Champagne glasses to enjoy your Champagne. Isabelle will explain the vineyard—with its planted vines—and the Champagne-making process in an educational cellar on the premises.
The tasting will be accompanied by the famous Biscuits Roses de Reims.
As you leave, the bride-to-be or groom-to-be will also receive a small surprise gift.

This Champagne Sabrage Experience can be combined with a Wine Tourism Getaway in the village and Grand Cru vineyards of Ay-Champagne. A tour and tastings at a winemaker’s estate are available upon request for an additional fee.
You’ll enjoy a 2-hour walking tour with Isabelle. Amid the vineyards, Isabelle will tell you about the exceptional terroir of Ay-Champagne—classified at the highest level of the appellation as a Grand Cru—and its history.
The tour will include a tasting of three famous Champagne spirits (Ratafia, Fine de la Marne, and Marc de Champagne).
