Discover the art of Asian ravioli, an emblematic specialty of Asia, from China and Japan to Korea and Southeast Asia. Learn how to create your own ravioli, in a variety of shapes, textures and flavors.

Workshop schedule (3h) :

• Presentation of the world of ravioli, their history and the different varieties throughout Asia.
• Preparation of the filling: shiitake mushrooms and vegetables, tips for perfect textures.
• Shaping wontons by hand, discovering different techniques and shapes.
• Cooking ravioli and tasting tips.

Lunchtime:

• The wontons will be served hot in a celeriac consommé, accompanied by vegetables and a spice-infused soy sauce.
• Accompanied by kimchi (Korean-style lacto-fermented vegetables) and tofu with homemade soy sauce or chili crisp oil.
