Immerse yourself in the fascinating world of vegetable fermentation at the heart of an artisan micro-bakery specializing in sourdough and fermented products. This workshop offers you a complete immersion with Raphaël, between Korean tradition and natural fermentation techniques.

Course of the workshop (2h):

• Introduction to the world of fermentation: tour de table, presentation of the basics and discovery of kimchi, the star of lacto-fermented vegetables.
• Make your own kimchi, customized to your tastes (more or less spicy), with step-by-step instructions. Remember to bring a 75cl joint jar (Le Parfait type) - a jar can be provided if you forget.
• Opening up to other types of fermentation: gherkins, sauerkraut, hot sauces... with explanations of nutritional benefits, preservation and creative possibilities.
• Tasting of fermented vegetables to awaken the taste buds and better understand the subtleties of the flavors produced by fermentation.
