A day spent moving from the kitchen to the woods. Accompanied by a chef and a botanist, you’ll discover mushrooms in all their forms: learning how to cook them using haute cuisine techniques, then learning to identify them in their natural habitat. An experience that awakens the senses—both educational and rejuvenating.

Schedule for the day (7 hours):

Morning: In the Kitchen

A welcome drink to gather and get to know each other in a friendly atmosphere
Presentation of the day’s varieties, both wild and cultivated (shiitake, lion’s mane, chanterelles, porcini), as well as the organic and local ingredients that accompany them
Then it’s time to cook, in small groups with two chefs to guide you. You’ll learn how to clean, slice, sauté, and pair mushrooms to bring out their flavors. On the menu:
- mushroom tartare seasoned with toasted walnuts
- velvety cream of pink oyster mushrooms with rosemary
- crispy eryngii crisps
- an unexpected dessert combining praline and nameko mushrooms
Tasting of your creations (plan to bring a picnic lunch as well, depending on your appetite)
