• A botanical approach to vines, with the discovery of Burgundy grape varieties, their specific characteristics and their adaptation to soil and climate.
• Explanations of pruning and the vegetative cycle, to better understand the rhythm of the vine through the seasons.
• Passing on the traditional know-how that shapes the excellence and reputation of the region's grands crus.
