Alongside a pastry chef and a cultural facilitator, you’ll learn how to make various choux pastry-based desserts, as well as all the “little tips” from top chefs, which will then allow you to easily recreate them at home.

Course Outline (3 hours):

  • An exploration of thehistory of French pastry and trends throughout the ages.
  • Next, you’ll learn the secrets and techniques of pastry chefs.
  • Then it’s time to get your hands dirty: make choux pastry and transform it into various pastries, prepare the fillings to go with them, and make the glazes and craquelins.
  • You’ll be introduced to making various desserts: chocolate éclairs, Paris-Brest, Religieuses, and more.
  • Assembling your creations.
  • You’ll take home the desserts you’ve made.

After an afternoon in a small group (7) supervised by a chef and a hostess, all in good spirits but without sacrificing the rigor that pastry-making imposes, after the basic preparations and the making of the choux, the time needed to bake the choux was ideal for a relaxing session over a cup of tea or coffee, enhanced by anecdotes on the history of pastry-making from our hostess. Then came the time to finalize the choux before tasting them, and there was nothing but happiness, Thank you both for a very rewarding experience.

We were warmly welcomed and offered tea/coffee. The workshop took place in a great atmosphere, with very good advice, and the cooking break was used by our host to give us a playful introduction to the history of cabbage. We highly recommend it!
