In the company of a pastry chef and a cultural animator, you'll learn how to make different choux pastry-based desserts, as well as all the "little tricks" of the great chefs, which will enable you to reproduce them easily at home.

Course outline (3h) :

  • Discover thehistory of French patisserie and the trends that have marked it over the years.
  • Then, you'll learn the secrets and techniques of pastry chefs.
  • Then it's time to get to work: making choux pastry and transforming it into different pastries, making the creams that go with them, making glazes and crackers.
  • You'll learn how to make a variety of desserts, including chocolate éclairs, Paris-Brest and Religieuses.
  • Assemble your creations.
  • You'll leave with your finished desserts.

After an afternoon in a small group (7) supervised by a chef and a hostess, all in good spirits but without sacrificing the rigor that pastry-making imposes, after the basic preparations and the making of the choux, the time needed to bake the choux was ideal for a relaxing session over a cup of tea or coffee, enhanced by anecdotes on the history of pastry-making from our hostess. We were warmly welcomed and offered tea/coffee. The workshop took place in a great atmosphere, with very good advice, and the cooking break was used by our host to give us a playful introduction to the history of cabbage. We highly recommend it!

Many thanks to Evelyne for her warm welcome and to Morgann, our pastry chef, for the "Pâtisserie & arts culinaires autour des Petits choux" workshop. We were a small group, and I was delighted with the workshop, which was exactly what I was looking for. Morgann is a great teacher, calm and attentive to our needs. We took it in turns to bake, following Morgann's methodology and correcting us if necessary👍🧑‍🍳. At the end, we tasted some of our creations (chocolate choux and Paris-Brest) and left with the rest, which we enjoyed as a family at home. I recommend this workshop even if you're a beginner in , you won't be disappointed 😊. Many thanks again!
