There’s nothing quite likea beautiful holiday menu for getting together and sharing a delicious meal with loved ones. Over the course of 3 hours, guided by the chef, you ’ll discover the fundamentals of French cuisine through a menu that puts a new spin on holiday classics, using high-quality, minimally processed ingredients.

Course Outline:

• You’ll learn how to finely fillet a fish to create delicate, uniform preparations.
• You’ll discover how to fillet a bird and learn the proper techniques for preparing meat with precision.
• You’ll practice poaching choux pastry to achieve a smooth, perfectly cooked dough, ready to be filled.
• You’ll discover the principles of plating and learn how to showcase your dishes with finesse and simplicity.
• You’ll create a full menu that changes with the seasons, featuring a starter, main course, and dessert inspired by the great classics of French cuisine.
• In the spring and summer, you’ll prepare a sea bass carpaccio with peppers, zucchini, and olives served with tomato sorbet; a filet of roast duck with nectarines, served with quinoa and scallions in a light almond broth; and cream puffs filled with pistachio cream, whipped cream, and raspberries.
• In the fall and winter, you’ll make a thin scallop tart with butternut squash and a briny sauce, a guinea fowl supreme served with truffle-infused purée and root vegetables, as well as 66% dark chocolate cream puffs with gingerbread whipped cream.

By the end of this workshop, you’ll have mastered new techniques for working with ingredients with precision and creating an elegant, gourmet holiday menu. A 3-hour experience to perfect your fundamentals of French cuisine and learn how to plate beautiful dishes with simplicity.
