A true gem of a little cake, the macaron charms with its delicately crisp shell, its melt-in-your-mouth center, and its indulgent fillings. Over the course of 3 hours, guided by the Chef, you’ll learn to master the essential techniques for making beautiful macarons and discover the secrets behind three recipes featuring a variety of flavor combinations.

Course Outline:

• You’ll learn how to make colored Italian meringue, an essential step for achieving smooth, even, and well-structured macaron shells.
• You’ll discover the proper techniques for preparing the different fillings that will add all their indulgent flavor to the macarons.
• In particular, you’ll learn how to make buttercream and ganache, working on their texture and consistency to achieve a perfectly balanced result.
• You’ll practice piping the shells to master the consistency, size, and shape of your macarons.
• You’ll make three macaron recipes with different fillings, with recipes that change with the seasons.
• In the spring and summer, you’ll make raspberry, pistachio, and apricot macarons—or macarons featuring another seasonal fruit.
• In the fall and winter, you’ll make macarons with salted butter caramel, pistachio, and lemon fillings.

By the end of this workshop, you’ll have mastered the key techniques needed to make homemade macarons, from preparing the shells to piping and filling them. A delicious experience where you’ll learn the right techniques and leave with a solid foundation in pastry making.
