Course Outline

• You’ll learn to make and master both Swiss and French meringues while discovering the unique characteristics and techniques specific to each.
• You’ll practice using a pastry bag to shape your meringues with precision and consistency.
• You’ll discover how to make a smooth chocolate ganache and learn to work with different textures using chocolate.
• You’ll learn to whip light and airy whipped cream to accompany and garnish your creations.
• You’ll create three indulgent meringue-based desserts: a dark chocolate Merveilleux, a white chocolate Merveilleux, and a chestnut-citrus Pavlova.

By the end of this workshop, you’ll have mastered the key techniques for making meringues and will know how to pair them with different fillings to create elegant, indulgent desserts. A 3-hour experience to perfect your pastry-making skills and discover the full potential of meringue.
