Dive into a gourmet sensory journey led by Stéphanie, a graduate of the École de Chocologie Paris and the IICCT (International Institute of Chocolate and Cacao Tasting).

This workshop will introduce you to the botany of cocoa, the steps involved in transforming it into chocolate, and then the art of sensory tasting, just like an oenologist!

Workshop schedule (1h30) :

• Introduction to cocoa cultivation: botany, terroirs, varieties, origins
• Understanding the steps involved in making chocolate, from bean to bar
• Introduction to the sensory method used by professional chocolatiers and tasters
• Guided tasting of 6 samples to explore aromas, textures, profiles and nuances
• Learn to identify aromas and analyze chocolate as you would a fine wine
• Discover notions of terroir, vintages, grands crus and aromatic profiles
