Activity description :

Marie welcomes you to the heart of the Domaine de Fontainebleau, to introduce you to her world: butchery! Over the course of 2 days, you'll learn how to work an entire pork carcass.

Workshop schedule (2 days):

  • Meet at 8:30 a.m. for a good breakfast to get acquainted.
  • Explanation of the process and the origin of the pig you'll be processing together.
  • You'll then gather around the logs to learn how to cut up a whole pig , and the secrets of using the different cuts.
  • Saturday will be devoted to the cutting and preparation of charcuterie, which takes several days to complete.
  • On Sunday, it's time to cook terrines and black pudding, and chop up the pieces you'll use for sausages.
  • You'll also learn how to cut, bard and tie your cuts of meat.
You'll go home with your arms full of incredible, homemade products to share with family and friends!
