Activity description :

If you're a pastry lover, come to the Ducasse School of Cuisine to create delicious praline-based recipes. During this pastry workshop, discover all the techniques for working with praliné: recipes and tips will be on hand!

But what exactly is praliné? Praliné is a paste made from hazelnuts, sugar and chocolate. It's usually found in chocolate confectionery, and more often in Paris-Brest, a French pastry made with choux pastry and praliné.

Course of the pastry class (2h) :

  • Making a Paris-Brest, from A to Z: choux pastry, praline, filling the crown with a piping bag.
  • Throughout the recipe, the chef will accompany you and give you tips on how to make a success of your pastry.
  • All preparations are tasted on site with the chef.
