Tasting Itinerary (1 hour and 30 minutes)

• Welcome to the tasting room and an introduction to the Iberian ham industry: breeds, acorn-fed diet, and curing time.
• Hand-carving in front of you, piece by piece, by a master jamonero.
• Progressive tasting of 7 varieties of ham, ranging from non-Iberian to 100% Iberian bellota: Gran Reserva, 50% Iberian cebo, 50% Iberian campo, 50% Iberian bellota, 50% Iberian bellota paleta, 50% Iberian bellota taquitos, and 100% Iberian bellota.
• Guidedpairing: each ham is paired with a Spanish wine or cava to understand how the pairing transforms the flavors.
• A direct comparison of the different types, all presented on the same table, to appreciate the differences in texture and aroma.
• Time for discussion with the master ham specialist.
