Indulge in babka, this braided brioche of Polish origin with a soft, stringy crumb and generous fillings, and discover all the secrets of making it alongside the Chef. Using the same yeast dough, you’ll also learn how to make delicious cinnamon rolls, for a gourmet immersion into the world of brioche.

Course Outline

• You’ll learn how to make a yeast dough and discover the essential steps for achieving a light, soft, and well-risen brioche.
• You’ll prepare a milk chocolate ganache to generously fill your babka and give every bite a melt-in-your-mouth texture.
• You’ll learn how to roll out and fill the dough before shaping it into the characteristic babka form.
• You’ll practice braiding the brioche to create the beautiful twists that give this specialty its charm.
• You’ll discover how to shape and roll cinnamon rolls using the same yeast dough base, before preparing them for baking.
• You’ll enjoy your creations with a cup of coffee or tea alongside the Chef and the other participants in a friendly atmosphere.
• Any pastries you don’t eat during the workshop can be taken home, so be sure to bring a bag and storage containers to help reduce waste.

By the end of this workshop, you’ll have mastered the key techniques for making yeast dough and shaping two delicious pastries that you can recreate at home.
