Course of the workshop (2h) :
- Welcome and introduction to the chef
- Discovery of the laboratory, utensils and ingredients
- Tempering: master the dough base before the crucial buttering stage.
- Turning: learn the technique of single and double turns for a flaky puff pastry.
- Shaping: roll out pains au chocolat and croissants.
- Baking: obtain a hazelnut color.
As well as the recipe, Géraldine will share her professional tips and little secrets with you. You'll leave with your own creations to delight your loved ones, as well as the complete recipe card.
